Funeral Potatoes- Revisited

Oh, I’ve truly become a woman of the 21st century now. For you see, my friends, I’ve discovered something remarkable indeed.

It is called Frozen Southern Hash Brown Potatoes.

Yeah. I know.

Some of us are slow to jump out of the horse cart and move up to light speed.

I took the same amazing Funeral Potatoes recipe that we have used anciently, and traded the 10 billion pounds of potatoes out–those 10 billion pounds of potatoes that took a month to cook and a week to cool and hours to cut up–but I digress…and possibly exaggerate.

ANYway, you trade the old potatoes out for three bags of these little, already cooked, frozen babies and POOF! you’ve just added back a year to your life. They taste just as good and look amazing on top of it all.

Oh, the miracles and wonders of culinary science…

and jumping out of the cart.

My Halloween-ish House

For many years, my Halloween decorations had their traditional places in my house–this one on the window sill and that one on the piano. You know how it works.  Then life changed and we moved a ton–4 times in as many years. If I could even find the decorations–they went wherever they would fit and sometimes that meant leaving them in the storage tubs altogether.

But this October, it was pretty dang fun to sort through Halloween tubs and decide what was mine and what would be better off living somewhere else.  One by one the decorations came out.  As I unwrapped them, each thing seemed to know right where it belonged. This one on the window sill and that one on the book shelf.

Almost like they were just waiting to finally get to this cute little house and help make it truly…

Over Achievers

These little girlies have been working super hard these days.

These super duper jumbo eggs were all layed within a few days of each other. Now, you can’t really tell how big they are here. So I’ll help you.

The one on the right is a normal egg–the kind we get every day.

The magical part about these enormous eggs–aside from the how-the-heck-did-they-DO-that?!– is that when you crack them open…

they have double yokes!!

Soooo…the regular 3 egg omelet becomes a family event!

I have no idea who’s eggs they were, but they all seem to be walking just fine.

Autumn In My Own Yard

Autumn is my absolute favorite time of year, but sadly, it seems to go by in a flash.

I barely have time to see all the changes that are taking place right under my nose,  never mind absorb them all.

Just as soon as I’m enjoying one lovely transformation of color…

What I wish, is that the actual season of Fall would last a full three months–with all those colors on the trees…

instead of appearing one day and floating to the ground the very next.

Or so it seems.

I suppose the only thing to do is to go outside and crunch around in it more. Perhaps a little each day–instead of sitting and watching it all from the window.

Yeah. I can do that.
