Writing To the Boy…

Here are the latest pictures of my cute boy in Lithuania. He is with some very dear friends that he has come to know and love–Inga and Arnoldas. Don’t they look so kind and sweet and doesn’t he look so happy?

It just dawned on me this morning that we won’t be getting many more of these pictures from him. In fact, since we write to him on Sunday nights–he will only get two more letters from us, and we will only get two more letters from him…

before he COMES HOME on the 10th of June!! Whatever shall we do with all this cute missionary stationary? Please, don’t anybody say–“Save it to write to the bald kid after HE leaves,” because I’m not quite ready to go there yet. Baby steps for this wussy mom, my friends…baby steps.

Can You Name That Doll?

Ice Cream Kolatkes

The whole time I was making these, I kept thinking…

“The Queen of Hearts she made some tarts all on a summer’s day;
The Knave of Hearts he stole the tarts and took them clean away.
The King of Hearts called for the tarts and beat the Knave full sore
The Knave of Hearts brought back the tarts and
vowed he’d steal no more.”

Poor guy.  He can have some of ours.

They are divine.

Ice Cream Kolatkes

Ingredients:

2 cups butter, softened

1 pint vanilla ice cream, softened

4 cups all-purpose flour

2 tablespoons sugar

1 tsp. salt

12 oz apricot or raspberry jam

1 to 2 tablespoons confectioners’ sugar, optional

Directions:

With electric mixer, beat butter and ice cream until blended (mixture will appear curdled). Add flour,  sugar and salt; mix well. Divide dough into four portions; cover and refrigerate for 2 hours or until easy to handle.

On a lightly floured surface–I use a pastry cloth– roll one portion of dough thin and flat;

Cut into 2-in. circles–

Now  roll each circle into a thin oval. Place a teaspoonful of jam at the end of each oval.

Overlap dough over filling; pinch tightly to seal.

Now roll up the rest of the dough.

Now, with seam side down, place 2 in. apart on ungreased baking sheets. Repeat with remaining dough and filling.

Bake at 350° for 18 minutes or until lightly browned.

Cool on pan for about 5 minutes before removing to plate.

Sprinkle with  sugar if you want them to be sparkly.

Share with the royal court.

Note: No Knaves were injured in the making, or eating of these tarts.

Who’s In Charge Here Anyway?

And I’m pretty darn sure those willow branches are not suppose to be touching the ground.

So the bald kid and I trudged around making little cardboard Barbie tents out of old boxes…

to shelter my newly planted petunias.

And they promptly got buried.

Be brave little flowers.

Just as soon as we humans are in charge again–Spring is certain to come.

Though I can’t prove it.

Ok, ok…I get it.

May Flowers

Nothing like a little color to remind a person that it really, truly is Spring…nearly Summer, in fact.  Goofy cold weather has been holding us back from the garden, but we’ve come to the place where if feels like “plant or perish!”


So the bald kid kindly dug up a generous patch of spent dirt, mixed it with some soil booster…

and promptly bought me some flowers. Ooohhh I love that kid. Someone must have raised him right…heh.

To me–pink and purple petunias are pure perfection. Say that 5 times fast, I dare you.

Anyway, we dug a billion little holes for our billion little flowers and filled each space with water. “A five dollar hole for a fifty cent flower” as my mama used to say. We had to work quickly because…

when we looked up to our mountains we saw…

all that coming our way.  Lucky for us valley folk that before it reached us…

the snow graciously…turned to rain.

Gracious rain.

Has a lovely ring to it–
