A Few Things…

that melt my heart~

A little lady-bug in a brand new, fluffy dress, finding a magical, Easter picture book in her basket…the same one I had when I was a girl.

The book that just might change my world a little bit…or a whole lot.

The little Jiff-kitty that would love to help me with the chicken project. Heh, heh.

Seeing that my sweet-faraway boy knows how to dye Easter eggs, without a mom directing traffic…

even in Siberia.

A simply-divine Easter treat–with the right brand, that is–which only April and I fully appreciate. YUM!

These gentle, tender souls who do their “jobs” and behave all day long…just for the promise of holding a little, mushy, sweet baby cousin.

Finding the tea cups from my long-since, packed-away dishes, just in time for some warm Peppermint tea with…

real, live, honest-to-goodness honey from my daughter’s dear friends, who raise their own bees. Heavenly!

Having a pile of lightly salted peanuts right near the computer, as a more rational, welcome replacement for the Mini Eggs–and the sugar buzz–that have been kicking around here for the past few weeks.

Those squishy little baby toes that belong to that soft, fluffy baby. Kissable.  :}

Strawberry Crepes

For years now–I have mercilessly taunted you with our Conference crepes without posting the recipe. Sincerely, the only reason for it is that every single time we’ve made them, everybody was so wrapped up in eating them, that we never got a decent picture. Well, not one without strawberry sauce and whipped cream flying all over the place, that is.

Dignity friends…dignity.

This year I was committed to holding the camera steady and snapping BEFORE I allowed myself to touch them. Luckily, the first shot worked cause that was the only chance we got. Then the feeding frenzy began…

Basic Crepes

Ingredients:

2 eggs–beaten

1-1/2 cups milk

1 cup flour

1 Tbsp oil

1/2 tsp sugar

1/4 tsp salt

Directions:

Combine all ingredients and beat on medium until well blended. Heat a lightly greased skillet. Spoon a scant 1/4 cup batter into pan and remove from heat. Tilt pan to spread batter evenly into a circle. Return to heat and brown on one side only. Allow to cool on paper towel or plate. Continue on with the rest of the batter.

Fruit Sauce

Ingredients:

3 cups fresh or frozen strawberries, peaches, raspberries or blueberries

1/3 cup sugar

1 tsp cornstarch

Directions:

If using frozen fruit, thaw it out and do not drain. Whirl 1/2 of the fruit in a blender.  In a small saucepan, combine sugar and cornstarch. Add whole fruit and blended fruit. Cook and stir over medium heat until thick and bubbly. Allow to boil about 2 minutes more. Cool.

While fruit sauce cools, spread about 1-2 Tbsps cream cheese down the middle of each crepe. Add about 3 Tbsps fruit mixture down the middle of crepe and roll. Serve with a few generous spoonfuls of sauce poured over the top and garnish with whipped cream…if you want.

But that goes without saying.

Snow Day

I wore capris yesterday.

The windows were thrown open…

all over the house.

I kicked off my sandals and rolled up my sleeves in the middle of teaching class…

because, it was just…

too–dang–hot.

Dear Mother Nature…

We’re confused.

Is it Spring yet?

First Fire

Normally, we wouldn’t be getting the fire pit out until after Memorial Day. You know, when it magically becomes “barbeques season.” Who makes up these rules anyway?

But Daney-boy came over with a nice, fresh bag of marshmallows and inspired us to be complete and utter rebels. Out we went in the dead of night to toast those little beggars. Oh, and I was ready too. I had a lovely package of Fudge Striped cookies–my personal favorite for making Blondie S’mores…instead of graham cracker/candy bar ones.

My favorite–that is–until I had my marshmallows toasty brown and ready for their new cookie/chocolate sandwich, and I quickly tore the package open and found…

this.

Looks like SOMEbody took a hammer to my package of cookies…or threw them on the ground…

about a hundred times. Obviously, dark and sinister forces were at work here. Who could do such a foul thing? Who could we call for help? Sadly, I’m not aware of any Broken Cookie Task Force at our local police department so we were pretty-much hung out to dry there.

Luckily, being the stalwart, sturdy mountain folk that we are…we came up with a plan B…

that…involved…

oh, FINE…

graham crackers.  Pfffft.
