Chewy Energy Bars

It’s a wonderful thing that these cute little bars are so full of energy–because you may just need some…to make more. They fit perfectly into snack-sized ziploc bags to tuck nicely into your purse or pocket. Oh, and one more thing—they taste fabulous.

The honest to goodness, gospel truth is that it was all I could do to get a photo of the last couple of bars before they got snatched up too.

Chewy Energy Bars

Ingredients:

2-1/2 cups crisp rice cereal

2 cups old-fashioned oats

1/4 cup toasted wheat germ

1 cup corn syrup

1 cup peanut butter

1/2 cup packed brown sugar

1 teaspoon vanilla extract

Directions:

In a large bowl, combine the cereal, oats and wheat germ. In a small saucepan, combine the corn syrup, peanut butter and brown sugar.
Cook over medium heat until peanut butter is melted, stirring occasionally. Remove from the heat. Stir in vanilla. Pour over cereal mixture; mix well.
Transfer to a greased 9-in. square pan. Gently press cereal mixture evenly into pan. Cool completely. Cut into bars.

Nutrition Facts: 1 bar equals 212 calories, 8 g fat, 0 cholesterol, 115 mg sodium, 33 g carbohydrate, 2 g fiber, 6 g protein.

Bird Watching

We’ve been pretty popular with the birds these days. They just flock to the deck like crazy, wild animals…ok, you know what I mean. Lately, we get dozens of the little critters every day…and all because I bought the wrong seeds. You see, I was in a hurry at the store and grabbed the first bag I found that said, “Bird Seed,” and bought it. But when I got home, I found the bag totally filled with black shelled sunflower seeds.

To my surprise, a whole different bunch of birds come around now. Normally, we have Starlings and Robins–that don’t want seeds anyway…they want my strawberries–and sparrows and finches–and an occasional dove or two.

But now–we’ve got very bold quail and blue jays coming right up to the windows to squawk when the feeder is empty..which is actually kinda scary, so we keep it full.

Ahhh…communing with nature.

and getting snubbed when the black seeds run out.

Sheesh.

Boy, Oh Boy

No, no. It’s not a new 80’s boy band–it’s those cute little guys in Siberia.

I really just LOVE them.

Especially that big guy in the middle…who seems to have a thing for yellow ties.

Who knew?

Can you believe that he’s been gone 6 months this week?

Well…I can. Seems like years.

Happy 6 month “anniversary” my sweet Bald Kid.
