100th Post…

This week marked the posting of the 100th…ahhh…post. Now that is either really cool, and means that I am very ambitious and dedicated, or it means that my family is right…I just talk a lot. I fear the latter will always be the case. sigh…

So in celebration of whichever thing is the case—I have decided that in keeping with the theme of this blog, “…making the most of what you’ve got,” I’d like to come up with a huge list called, “100 Things To Be Happy About.”

I’ll post what I’ve got on New Year’s Day and then, by way of your comments we will just build the list. Everyone has things that make them happy–and I’d love to hear what that is for you. With your help, I think we could easily get to 10 times 100 and that will only help us be happier, and more grateful…which will make us happier…and…oh, you get what I’m saying.

It will be great!

Caramel Corn Pops

If you’re looking for a quick and easy New Year’s snack–then give this one a try. Word of warning…you may just be making this well into March.

Just saying…

Caramel Corn Pops

1 box Corn Pops Cereal

2 cup pecan halves

1/2 cup butter

1 cup sugar

1/2 cup corn syrup

1 tsp vanilla

1 tsp baking soda

Preheat oven to 250 degrees. Combine cereal and nuts in a greased, shallow baking pan. Set aside. In a saucepan, bring butter, sugar, and corn syrup to a boil and cook for 5 minutes. Remove from heat. Add vanilla and soda. Pour caramel mixture over cereal and nuts.  Stir well until all are coated. Bake for 1 hour, stirring every 15 minutes. Pour onto waxed paper and break apart. Store in airtight container.

 

Snack Mixes– Mexi Crackers

Mexi Crackers

1 box cheese crackers

1/2 cup butter melted

1 package taco seasoning mix

1 Tbsp Worcestershire sauce

1/2 tsp seasoned salt

Preheat oven to 250 degrees. Place crackers in a large baking pan. In a measuring cup combine butter, seasonings and Worcestershire and salt. Pour over crackers. Stir until crackers are evenly coated. Bake 1 hour, stirring occasionally. Cool. Store in airtight container.
