Soft Breadsticks

My wise and all-knowing daughter April made the most amazing bread sticks the other day…almost exactly like the ones that are famous around these parts. They were incredible. So, I begged and pleaded and she finally, finally said I could share the recipe…but only here.

So baby…

…you’re getting the exclusive.

Directions:

2-1/2 cups warm water

2 Tablespoon yeast

1 Tablespoon sugar

more yeast

Dissolve yeast and sugar in warm water, let sit.

Pour into mixing bowl and then add the following:

2 Tablespoons butter

1 Tablespoon salt

3-4 cups flour

Using dough hook attachment, beat until smooth. Add enough flour to make a stiff dough. Knead in machine 2-5 minutes until smooth and elastic.

Place in greased bowl then turn to grease the top.

Cover with a damp cloth and let rise 45 min. to 1 hour…

…until double in size.

Punch down and divide in half.

Roll out on floured surface and cut into strips for small bread sticks.

Or divide into 10-12 pieces for large bread sticks or rolls.

Combine 1 beaten egg with 1 T milk.

Brush on breadstick and sprinkle with sesame seeds.

Or, dip in melted butter and roll in…

…Parmesan cheese with garlic herb seasoning.

Then let rise.

Bake at 375 for 10-15 minutes until slightly brown.

Remove and cool on wire rack.

Oatmeal Farm Cookies


I realize that yesterday, the post was all about being healthy and strong for the winter, and now something strange has come over me. There seem to be cookies coming out of the oven. But it’s not my fault. If you were to look out the window this very minute, you would see that it’s snowing and raining in turns outside. And anyone can tell you that the only thing to do when it’s snowing or raining outside is to bake lots and lots of cookies…inside.

So you see–it can’t be helped.

Oatmeal Farm Cookies

2 cups brown sugar
1 cup butter
1/2 cup milk
1tsp lemon juice
1 tsp vanilla
4 cups oats
1-3/4 cups flour
1 tsp baking soda
3/4 tsp. salt
Heat oven to 375 degrees. Mix milk and lemon juice together in a small cup. Mix brown sugar, butter, milk, and vanilla. Stir in the remaining ingredients. Shape into 1-1/2 inch balls. Place on ungreased cookie sheet. Flatten cookies with bottom of glass dipped in water. Bake about 9-10 minutes.

Cranberry Smoothie

I’m not a huge fan of really seedy berries, so I made mine with cranberries, peaches and strawberries. It was great. Lynnette says she likes to make them every few weeks or so to keep everyone healthy.

Ingredients

1 c apple juice
1/2 c vanilla yogurt
1 tsp vanilla
1 1/2 c frozen berries (ie 1/2 c cranberries, 1/2 c raspberries, 1/2 c blueberries)

Mix in blender

Honey Cake or Lebkuchen

For everyone looking for “Grampa’s” gingerbread house recipe–this is as close as we’ve been able to come and it works beautifully. The minced fruit and candied peel aren’t in here–but it was nasty anyway. So, your honey cake will probably NOT last until the Millennium…sorry. But dad also added things like powdered ammonia to some of his stuff and who even KNOWS what that was about? I can just hear him laughing his head off at us right now.

“Now, dear…it’s not gingerbread—it’s HONEYCAKE!”

I miss you, daddy. And all the secrets you took with you.  😀

Lebkuchen–Honey Cake

Ingredients:

3 cups sifted flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp ground allspice
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1 cup corn syrup
1/3 cup sugar
1 egg
2 tablespoons lemon juice
2 tsp grated lemon rind (optional)
1/2 cup confectioners’ sugar
1 tablespoon water

Stir together first 6 ingredients. In 1-quart saucepan, bring corn syrup and sugar to a boil. Cool.

In a large bowl stir together corn syrup mixture, egg, and lemon juice. Gradually stir in flour mixture until well blended. Cover; chill 1 hour or until easy to handle.

Roll out dough 1/4 at a time to 1/4″ thickness onto a well greased cookie sheet.  Bake in 400°F oven 6-10 minutes or until lightly browned. Remove from cookie sheet immediately and place on rack. Cut into cookies or house pieces while it’s still warm.

If cutting into cookies, mix confectioners’ sugar and water. While still warm, brush with glaze.  Cool.

May be stored in tightly covered container for a dang long time.

Makes about 4 dozen.

Chex Candy

Whips up quick–and makes a ton…

Chex Candy

Ingredients:

1-1/2 cups sugar

1 cup butter

1-1/2 tsp vanilla

1 box Chex cereal–Rice or Corn or both (1lb. 7 oz)

Cook first three ingredients together to full boil. Boil 2 minutes. Remove from heat and add vanilla. Pour over Chex and mix to coat all pieces. Spread on wax paper to cool.

I’ve heard of people adding dry roasted peanuts, or M&M’s, but we like it in it’s plain, unadulterated form. Call us purists.
