Rootbeer Float Cookies

Ingredients
  • 1 cup butter, softened
  • 2 cups packed brown sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1-1/2 tsp. root beer extract
  • 4 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt 12 oz. white chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, cream butter and brown sugar until fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Beat in buttermilk and root beer extract.
  5. Combine dry ingredients; slowly add to creamed mixture.
  6. Add chips and mix well.
  7. Drop by tablespoons onto ungreased baking sheets.
  8. Bake at 350 for 10-12 minutes or until lightly browned.
  9. Remove to wire racks to cool.
  10. Frosting:
  11. cups powdered sugar
  12. /4 cup butter, softened
  13. Tbsp. milk
  14. tsps. root beer extract
  15. In a mixing bowl, combine all frosting ingredients. Beat until smooth.
  16. Frost cooled cookies.
